I LOVE BOWLS! One of my favourite things to make at home is a big bowl of veggies and carbs covered in a yummy dressing. When you are eating a vegetarian/vegan diet these bowls become a stable. Mix and matching veggies fills you with nutrients and makes you fill good. You can eat these bowls every day without getting bored or feeling like you are missing out on yummy stuff. This bowl is crunchy, colourful, and the dressing is creamy and satisfying…hope you like it!
Ingredients:
For the Bowl:
1 Cup Cooked Brown Rice
1 Carrot ribboned
1/2 Red Bell Pepper finely sliced
1/2 Avocado
1 Spring Onion
Large Handful of Kale chopped
Handful of Red Cabbage finely sliced
Handful of Coriander
For the Dressing:
1/2 Cup Smooth Peanut Butter
4 tbsp Coconut Milk
4 tbsp Soy Sauce
1 tbsp Ginger minced
Juice of a Lime
Method:
- In a jug, add all the ingredients for the dressing and mix well with a whisk. If you want to punch up the seasoning then add a pinch of salt or a little more soy sauce.
- Prep all the veggies. Use a vegetable peeler to make carrot ribbons and a mandolin for the cabbage and bell pepper if you have one.
- Add the cooked rice to the bowl and pile the veggies on top. Add half an avocado and a good amount of coriander.
- Pour over half the dressing and sprinkle on some chopped spring onion. Enjoy!
