There is this one Mexican place my husband and I like to get take away from. Their guacamole and spicy burrito bowls are so good that I don’t know how they do it. I love all the different toppings, the tortilla chips, and the spicy chicken. However ordering take out isn’t the healthiest or cheapest option so I have tried to make a simple and affordable alternative for us at home. I made it vegetarian because I am mostly meat-free but you can easily add steak or chicken to this bowl.
Ingredients:
For the Bowl:
1 Romaine Lettuce chopped
2 cups Corn (frozen is fine)
2 cups Brown or Wild Rice
1 Avocado
1 Lime
Toppings to serve such as guacamole, sour cream, cheese, salsa, sliced avocado, meat if you aren’t veggie. (I will post separate recipes for my guac and salsa)
For the Black Beans:
1 can Black Beans
2 Garlic Cloves crushed
1 cup White Onion diced
1 tsp Cumin
1 tsp Cayenne
1 tsp Paprika
1 tbsp Olive Oil
2 Bay Leaves
14 oz Vegetable stock
1 Lime
Salt and Pepper to taste
Method:
1. Cook your rice according to the packet instructions. With most rice it is 2:1 liquid to rice ratio. Rinse the rice, add it to a sauce pan with double the amount of water. Bring to a boil, turn it down to simmer, and cover. It usually takes about 20-25 mins and then turn the heat off and let it steam for a few minutes.
2. Wash and chop your romaine lettuce into thin strips
3. In a pan pour about a tablespoon of olive oil and add the crushed garlic cloves. Let them fry for a minute and then add the diced onion.
4. When the onion is soft add in the cumin, cayenne, bay leaves, and paprika.
5. Drain and rinse your black beans and add them to the onion and spices.
6. Cover the beans with the stock and simmer for 30 minutes with the lid on- stir occasionally.
7. When the beans have absorbed the stock squeeze in the juice of a lime and remove the bay leaves. They are ready to serve.
8. In a large bowl fill a quarter of the bowl with chopped lettuce, a quarter with the cooked rice, a quarter with corn, and a quarter with the black beans.
9. Top with a dollop of sour cream, a squeeze of a lime, half an avocado, salsa, guac, or whatever you feel like.
