I love skillets because it means less dishes. I really hate doing dishes. It is also great when you don’t want to put much effort in but want something tasty for dinner.
Ingredients:
2 cups Brown Rice
1 cup White Onion diced
1 cup Zucchini diced
1 cup Bell Pepper diced
1 cup Celery diced
1 Red Chilli diced
1 tbsp Oregano
2 Cloves Garlic crushed
4 cups of Chicken Stock
Half a lemon
Additional: Chicken, Avocado, White Wine, Feta Cheese.
Method:
1. In a skillet big enough to hold all the ingredients heat some olive oil. Add the crushed garlic and fry. Don’t let it brown.
2. Throw in the onions, chili, and the oregano. Let the onions soften and then add the remaining vegetables.
3. Cook the vegetables for a few minutes and then add the rice. Stir through.
4. Cover with the stock and bring to the boil. You can use white wine at this point if you want a richer dish. Once it is boiling turn it down, cover, and cook for 20-25 minutes.
5. Once the rice is cooked and all the liquid has been absorbed it is ready to serve. Squeeze half a lemon over the rice and I topped mine with some chopped avocado and crumbled feta.
