This is a fun little meze dish that was really simple and tasty. Great with breads, meats, dips, and veggie meze stuff.
Ingredients:
2 Aubergines
200g Greek or Natural Yoghurt
1tbsp Tahini
100g chopped Walnuts
50g chopped Coriander
Handful of Pine Nuts
Lemon Juice
Olive oil
Salt and Pepper
Method:
1. Heat a griddle pan (or BBQ if you are using one) and while you are waiting slice the aubergines thinly lengthwise.
2. Brush the aubergines with olive oil and sprinkle with salt and pepper.
3. Place on the griddle pan face down for about 3 minutes each side until tender and with char marks from the griddle.
4. In a blender combine the yoghurt, tahini, walnuts and the coriander. Squeeze in a little lemon juice. Blitz it up and season to taste.
5. When the aubergines are done arrange them on a plate and spoon on your yoghurt sauce and sprinkle on a handful of pine nuts.
