This is really great for a quick lunch. It uses up a lot of veggies in the bottom of the fridge and is really healthy. Splash over a little bit of balsamic vinegar and a pinch of parmesan and you’re good to go.
Ingredients:
2 Roasted Red Pepper jarred
1 Yellow Pepper diced
1 Yellow Onion diced
1/2 Courgette finely diced
1 Garlic Clove crushed
1 tbsp Italian Seasoning
Pasta
Olive Oil
Salt and Pepper
Parmesan about 50g
Balsamic Vineagar
Method:
- Prep all the veggies by finely dicing into very small cubes.
- Put a large pot of water with a good pinch of salt on to boil. When its boiling, add the pasta and cook according to the packet instructions. Drain in a colander and drizzle a bit of olive oil and a pinch of salt over the pasta.
- In a large sauté pan, heat about a tablespoon of olive oil and add the garlic and the Italian seasoning. Fry for a minute and then add the onion. Fry until the onions are translucent and then add the yellow pepper and courgette. Cook the until the veggies are soft and then add the chopped up roasted red peppers and then sprinkle over a good amount of parmesan.
- Pour the pasta into the cooked veggies and mix it all around. Add about 2 tbsp of balsamic vinegar to the pasta and serve. Enjoy for lunch or dinner!
