Nourish bowls are wonderful for a healthy lunch. They are very popular at the moment because you can add different veggies and carbs and it won’t get boring. Full of variety and punchy ingredients this bowl is will keep you going until dinner.
Ingredients:
For the Kale:
1/2 Bunch of Green Kale
1 Garlic Clove crushed
Juice of a Lemon
Olive Oil
Sundried Tomato Almond Sauce:
1 Jar Sundried Tomatoes
1 Cup Whole Almonds
1 Garlic Clove crushed
Juice of a Lemon
Salt
For the Bowl:
1 Cup Pesto Pasta Salad (my recipe is here)
1/2 Avocado sliced
Salt and Pepper
Method:
1. Wash and chop the kale into small strips.
2. Heat a sauté pan with a little olive oil and add in the crushed garlic clove. Let that fry for a minute then add the kale. Let that cook for another minute then squeeze in the juice of a lemon.
3. In a blender, add all the ingredients for the sundried tomato almond sauce and blitz. If the sauce is too thick you can add in a few tablespoons of water.
4. In a large bowl, fill half with the cooked kale, and half with the pesto pasta. Add a dollop of the sundried tomato and almond sauce and half a sliced avocado. Squeeze over a little bit of lemon juice, season to taste, and enjoy.
