Yummy pasta with fresh spinach, garlic, and a creamy tomato sauce is bound to be satisfying any night of the week. It is a bit indulgent but a bit of cream never hurt anyone. Enjoy with a simple salad and glass of red.
Ingredients:
1/2 Box of Dried Pasta
2 Garlic Cloves crushed
1 Can Crushed Tomatoes
1/2 Bag of Fresh Spinach
1/2 Cup Cream
1/2 Cup Parmesan grated
Salt and Pepper
Olive Oil
Method:
1. Boil a large pot of salted water for the pasta. Add the pasta and cook according to the packet instruction. Drain in a colander.
2. In a large skillet, while the pasta is cooking, add a little olive oil and the crushed garlic. Fry for a minute and then add in the tin of tomatoes. Let that simmer for a few minutes.
3. When the tomatoes have started to soften, add in the cream and half the cheese, and season according to taste. Turn down to low and let the sauce cook for 5-10 minutes.
4. Add in the spinach and pour in the cooked pasta. Stir to cover the pasta with the sauce and so that the spinach wilts.
5. Sprinkle with the remaining cheese and serve ๐
