I love this salad during the summer at a BBQ with any kind of grilled meats or fish. It is also great alone for a quick lunch or dinner.
Ingredients:
1 cup of Orzo
1 can (425g) of Black Beans
1 cup of Corn (frozen is fine)
1 cup of finely chopped Red Onion
Handful of finely chopped Coriander
1 Lime juiced
¼ cup of chopped Feta cheese
Salt and Pepper
Method:
1. Add pasta to boiling water and cook until tender with a slight bite to it.
2. Chop red onion, coriander and feta cheese and add to a bowl.
3. Drain the black beans, rinse if necessary, and add to the bowl along with the corn.
4. When the pasta is ready, drain and add to the bowl.
5. Mix everything together with the lime juice and salt and pepper to taste.
Addition; if you feel fancy add half a diced avocado.
