My mum makes the best scones! She is a wonderful chef/baker with her own bakery business so I go to her for any baking advice. I wanted to make some scones at home so she sent me her recipe. Usually I avoid baking because I tend to mess it up and I’m not very patient with it. However these are really simple to make and they came out perfect. Very yummy with a big dollop of cream and jam.
Ingredients:
- 4 Cups Flour
- 1/4 Cup Sugar
- 350g Butter room temperature
- 2 tbsp Baking Powder
- 2 tsp Salt
- 4 Eggs
- 3/4 Cup Cream
- 1 Egg Yolk
- 2 tbsp Milk
Method:
- Pre-heat the oven to 375º
- In a large bowl pour in the flour and add the room temperature butter. Using your fingertips, rub the butter into the flour until you get a bread like texture.
- Add in the sugar, salt, and baking powder. Mix it together gently.
- Make a well in the middle of the mixture and pour in the wet ingredients (eggs and cream).
- Bring the mixture together with a knife and tip it out onto a clean, lightly floured, surface.
- With your hands, form the mixture into a large circle about a cm thick.
- Cut the mixture into 8 large triangles.
- In a little bowl mix together an egg yolk and the milk. Brush the scones with the mixture.
- Place on one or two baking sheet that has been covered with baking paper. Bake for about 20 minutes until they are golden brown.
- Remove from the oven and set them aside to cool down before serving. Dollop on some cream and jam and dig in!
