This is my favourite banana bread recipe by far. It’s so light and fluffy and couldn’t be easier to make. If you have seen my other baking recipes you know I usually avoid making cakes because I’m pretty crap at it. Not with this recipe though!
I often make it with the kids because it doesn’t require lots of measuring and preciseness (which everyone knows kids can’t stand) and it only has about 4 steps so they don’t get impatient. It will be ready to go in the oven in 10 minutes and is stress free for the grown ups.
Ingredients:
3 Bananas, very soft and mushy
140g Butter, softened
140g Flour
140g Sugar
2 tsp Baking Powder
2 Eggs
Method:
- Preheat the oven to 350º and grease and line a loaf tin.
- In a large bowl, beat the softened butter and sugar until it is light and creamy.
- In a separate bowl, mash up the bananas with a fork until they are very smooth. Try and get rid of as many lumps as possible.
- Add the eggs to the creamed butter and sugar.
- Add about half the flour to the mixture and carefully combine. Then slowly add the banana, baking powder, and the remaining flour. Mix it well to make a smooth cake batter.
- Pour the mixture into the lined tin and place in the oven. Bake for about 30-40 minutes until golden brown and spongy. If you can insert a skewer into the middle of the loaf and it comes out clean its done. Slice up and enjoy!
