A yummy, easy, salad full of greens and dressed in a zesty lemon and mint dressing. This goes really well with some antipasti and breads or enjoyed on its own for lunch.
Ingredients:
Rocket
2 Eggs soft boiled
1/2 Red Onion finely sliced
Large Handful of Peas
Juice of a Lemon
6 tbsp Olive Oil
Few Mint Leaves finely sliced
Salt and Pepper
Method:
1. Boil a pot of water and place in two eggs. Cook for 6 minutes for a soft set yolk. Remove them from the water and submerge in cold water. When the eggs have cooled, peel them, and set aside.
2. In a large bowl, add a few large handfuls of rocket. Sprinkle over a handful of peas and half a red onion finely sliced.
3. In a small jug mix the juice of a lemon, olive oil, and a good pinch of salt and pepper. Finely slice some mint leaves and add them into the dressing. Whisk the dressing.
4. Pour the dressing over the salad. Cut the soft boiled eggs into quarters and place on the salad. Add a little salt and pepper on to the eggs and serve. Enjoy!
