These protein packed burgers are a great option for veggies and meat eaters alike. They are really easy and go great with the usual burger toppings.
Ingredients:
1 tin of Black Beans
150g of Mushrooms chopped
1 Red Chilli finely chopped
3 Spring onions chopped
100g Bread crumbs
1 Egg
1 tsp Cumin
Salt and Pepper
Olive Oil
Method:
- Drain the black beans in a colander and rinse. Finely chop a chilli and trim and chop the spring onions.
- Chop the mushrooms into little pieces and place in a hot pan with about a tablespoon of olive oil and a pinch of salt. Cook for a few minutes until they start to brown and reduce in size. Turn off the heat and let them cool.
- In a large bowl add the black beans, finely chopped spring onions, chilli, bread crumbs, cumin, and salt and pepper to season.
- Add in the mushrooms once they have cooled and crack in an egg. Mash it together to bind all the ingredients. Don’t over mix it because you still want some texture from the beans and mushrooms.
- Form the mixture into four rough balls and then flatten gently with the palm of your hand.
- In a large frying pan heat some olive oil and add in the burgers. Cook on either side for about 4 minutes or until they are golden brown.
- Serve with whatever toppings you like and enjoy!
