This wonderful vegan bowl is full of healthy stuff that is great for you. I made this when I had had a busy week and my diet had taken a back seat. I was feeling the need for some “pick me up food” full of nutritional stuff and this did the job. It made me feel much better and was really easy to make. Just assemble all the parts into a large bowl and tuck in.
Ingredients:
For the Turmeric Sweet Potato Mash:
1 Large Sweet Potato
1 tbsp Olive Oil
1 Garlic Clove crushed
1 tsp Turmeric
1 tsp Salt
1 Cup Vegetable Stock
For the Garlic and Lemon Kale:
1/2 Bunch of Kale washed and chopped into small pieces
2 Garlic Clove Crushed
Big Squeeze of Lemon Juice
Olive Oil
Salt
For the Bowl:
1 Cup of Cooked Brown Rice
Handful of Roasted Almonds Chopped
Half an Avocado
Sprinkle of Chilli Flakes
Method:
- Peel and chop a sweet potato into small cubes.
- Start cooking the rice according to the packet instructions. Or I have a guide under tips 🙂
- Pre-heat the oven to 350º and place a handful of raw almonds on a baking tray. Roast for 5 minutes until they are golden brown.
- When they are ready remove the almonds and roughly chop. Set aside.
- In a pan, add the olive oil and the crushed garlic for the sweet potato. Let that cook for a minute or two.
- Add the sweet potato cubes, turmeric, and salt. Mix it around so that the turmeric covers all the potatoes.
- Add the stock to the potatoes and cover. Let it simmer for 10 minutes. Once the potatoes are soft use a potato masher to make a smooth mash.
- In another pan heat a little olive oil and then add the crushed garlic clove for the kale. Let it cook for a minute or two.
- Add the chopped kale and once the kale starts to wilt squeeze over a good amount of lemon juice. Add a pinch of salt.
- To build the bowl add a scoop of cooked brown rice, a cup of the garlic and lemon kale, and a big scoop of the sweet potatoes. Sprinkle over the roasted almonds, add half an avocado and a few chilli flakes. Enjoy!
