Breakfast of champions! The instagram-able avocado has become a stable of the whole foods movement mainly for its nutritional benefits and creamy taste. It is very high in potassium, vitamin E, and has lots of good fatty acids which are associated with heart health. Avocados are great for mixing with other ingredients and this simple breakfast utilizes the decadence of this fruit…yes fruit.
Ingredients:
1 Ripe Avocado
2 Slices of Whole Wheat Toast
Squeeze of Lemon Juice
Salt and Pepper
Pinch of dried chilli flakes (optional)
Two poached eggs (optional)
You can top Avocado Toast with almost anything. I like mine with a poached egg and a few chilli flakes. There are countless things to try so be creative.
Method:
- Scoop out your avocado and place in a bowl.
- Smash it up with a fork and squeeze in juice from about a quarter of a lemon and season to taste.
- Toast your bread and smooth the avocado evenly onto your bread.
- Top with anything you like. I recommend a poached egg and a pinch of chilli flakes.

- Feta, pea and mint
- Chilli jam and bacon
- Roasted tomato and basil
- Corn and black bean and salsa
